Avocado Toast with Feta Cheese and Microgreens
Ingredients
1 slice toast
1/2 acocado mashed with a fork
1 tsp. EVOO (olive oil)
1 tsp. feta cheese crumbled
1 tsp. microgreens (any variety)
Directions
1) Spread mashed avocado on toast.
2) Drizzle EVOO on avocado.
3) Add crumbled feta cheese and microgreens on top and enjoy!

Beer Battered Deep Fried Mushrooms Ingredients 1/2 lb. of mushrooms Vegetable oil for frying 1 Egg 2/3 cup flour pinch of black pepper 1/2 tsp. baking powder 1/2 tbsp. oil 1/2 tsp. seasoning salt 1/2 cup beer Favorite dipping sauce or dressing |

Directions
1) Clean and prepare your mushrooms.
2) Beat egg well. Add black pepper, baking powder, oil and seasoning salt and mix well.
3) Add beer and flour. Mix thoroughly. Let batter rest for approximately 5 minutes.
4) Heat oil to 375 degrees F. Dip a few mushrooms in batter , allowing excess batter to drip off. Carefully add mushrooms to hot oil leaving plenty of room for cooking.
5) Cook until puffed and golden, about 5 minutes. Use a wooden spoon or tongs to turn them over half way through cooking. Immediately drain on paper towel.
6) Repeat with remaining mushrooms allowing a few minutes between batches for the oil to reheat.
7) Serve warm with your favorite dipping sauce!
